With scorching temperatures, days spent at the pool, and more BBQ invites than I can count, I have been in full summer mode lately. I have tried to stay clear of the oven for awhile now, but as of late, I could not resist the urge to bake up some yummy summer treats. Finally, I gave in; this is what I made...
Glazed Lemon Bars
|I promise you all, I WILL get a new camera ASAP!|
Yield: 30 bars/Time: 1 hour
1 cup butter/margarine (softened)
1/2 cup powdered sugar
2 cups all-purpose flour
1 teaspoon baking powder
1/4 cup all-purpose flour
2 cups granulated sugar
1/4 cup lemon juice
2 cups powdered sugar
1/2 cup water
1. Preheat oven to 350 degrees. Using a large mixing bowl, combine all crust ingredients and beat on low until crumbly. Evenly press crust into 9x9 greased baking dish. Bake for 25 minutes.
2. Meanwhile, slightly beat 4 eggs. Then add baking powder, flour, and sugar and continue to beat until well mixed. Add lemon juice. Evenly pour this mixture on top of the cooked crust and place back in oven (350 still) for another 25 minutes. Once the top is golden brown, take out and let cool for an hour.
3. Combine powdered sugar and water together in small mixing bowl until desired consistency; add more of one or the other if need be. Pour over cooled lemon bars.
4. Enjoy! (And refrigerate!)
